How to clean Magic Frying Pan

The Magic Frying Pan is not coated with non-stick material.

Similar to the old fashioned iron pans, this frying pan prevent sticking by absorbing oil on the surface.
At first, it may seems a bit of a work, but the pan will grow into your own once you learn the tips of caring it.

At the beginning

Wash the Magic Frying Pan / Peking Wok

The products can be immediately used for cooking after a washing (you may use dish soap at the first time).

You do not need the process of seasoning the pan/Wok by frying vegetable scraps and such.


Preparation before cooking

Wash the Magic Frying Pan / Peking Wok

Heat the pan/Wok thoroughly first, and grease the surface with oil.
The below oil pouring process is very effective to prevent sticking.

1)Pour generous amount of oil into a well-heated pan / Wok.
2)When the oil coated overall surface, pour the oil out into an oil pan.
After the process, add some more oil to start cooking.

Checking the white smoke coming from the surface oil.

The optimal temperature for cooking is 160 to 180 degree C.
Fast and furious white smoke coming from the oil means the temperature is too high. Reduce the heat.

Start cooking after the surface is well-greased and the temperature reaches the optimal level.


During cooking

Wait and see even if food seems to be sticking at first

Meat may momentarily stick to the surface immediately after added to the pan, but it usually comes off as it is cooked.Do not forcibly peel it off. Wait and see first.

Reduce heat when food starts sticking during cooking.

If food started sticking while it is being cooked, it means the heat is too high. Reduce the heat.

Watch for the heat when adding seasoning ingredients at the end.

The seasoning ingredients such as soy sauce easily evaporate at high temperature and may cause sticking and burns.

Adjust the heat for different ingredients

The surface may burn while it is still undone inside for some ingredients.
For batters like pancakes and Okonomi-yaki, cook slowly at low temperature for thoroughly cooking inside and achieving fluffy texture.

After use

Wash the pan / Wok immediately after cooking

The pan / Wok is easier to clean when it is still warm.
Do not clean in a dish washer.

Avoid the use of dish soap. Wash with warm or cold water.

The Magic Frying Pan and Peking Wok prevent sticking by absorbing oil on surface.
To maintain the oil coat, do not use dish soap unless it is necessary.

Completely remove burns

Burn can be easily removed by boiling water in the pan/Wok. For stubborn burns, use hard sponge or wire sponge to remove burns completely. You may use scouring powder. It becomes more difficult as the burn builds up. Remove burns while it is still small.

Dry and grease after washing

Heat the pan/Wok after washing, lightly grease the surface with oil absorbed kitchen paper, and store.


Caution in using Induction Heating (IH) cooking stovetop

IH cooking stovetop sends electricity through coils to generate magnetic power which will flow electricity to pans / Woks. The magnetic power is distributed in swirl direction when it contacts the metal Wok/pan bottom placed on stovetop plates. This is why the pans/Woks used for IH cooking stovetops must be magnetic.
On the other hand, the cast iron used for the Magic Frying Pan / Peking Wok naturally possesses electric resistance (the property which hinders electricity flow). The heat is generated by friction when electricity forcibly flows against the resistance.

Heating slowly with low to mid heat

IH cooking stove directly heat the donut-shaped central heating source only.
The heat from flame will not be transmitted to the side surface like for gas stove. Heating the pan/Wok in high heat from the beginning will heat up the heating source only and leaves the non-contacting area cold. Undercooking and sticking can be prevented by evenly and slowly heating overall pan/Wok. Oil pouring process is also effective in even heating of the whole pans / Woks.

Change the heating methods for the food that easily burns and sticks

The food that will not be stirred during cooking such as Okonomi-yaki and pancakes are prone to burns at the area directly heated by the heating source. You can prevent overheating the same area by changing pan location on the heating plate or stop heating for a while in the cooking process.

Use the pan/Wok under medium heat or lower only

IH cooking stove generates heat by magnetic force.
High heat may result in stronger magnetic force and may result in deformation of pan / Wok.
Make sure to heat under medium heat or lower, and do not heat it without food for a long time.
